I've tried practically every type of cheddar, whilst in Cheddar. It's a beautiful village in a limestone gorge. The geology was fascinating, the food was great, and they sell dragon ornaments, minerals and fossils^^

Try Applewood (a mature, smoked chaddar), it's awesome. Wash it down with some farm-brewed cider...good times
